Mint Watermelon Smoothie:

Prep Time: 3 minutes and Cook Time: 1 minute

Ingredients: ¼ watermelon, 1 cup ice, ¼ cup milk of choice, 1 mint leaf (or ½ teaspoon mint extract) and 1 teaspoon honey


Greek SaladToast

Prep Time: 4 minutes and Cook Time: 1 minute

Ingredients:1 slice toast, 2 tablespoons Greek yogurt, 10 cucumber slices, 5 diced cherry tomatoes, 1 tablespoon feta cheese and 1 teaspoon pepper


Peanut Butter, Krispies and Chocolate Sandwich

Ingredients:1 tablespoon creamy peanut butter, 1 slice crusty white bread, 2 tablespoons Rice Krispies and 1 teaspoon grated dark chocolate candy bar


Brownie Batter Dip

Ingredients: 1 package (8 ounces) cream cheese, softened, 1/4 cup butter, softened, 2 cups confectioners’ sugar, 1/3 cup baking cocoa

1/4 cup 2% milk, 2 tablespoons brown sugar, 1 teaspoon vanilla extract, M&M’s minis, optional

And Animal crackers, pretzels and/or sliced apples


Lemon-Apricot Fruit Pops

Ingredients:1/4 cup orange juice, 1 teaspoon grated lemon zest, 1/4 cup lemon juice, 4 teaspoons sugar, 1 cup sliced fresh apricots (4-5 medium), 1/2 cup ice cubes, 1 teaspoon minced fresh mint, optional and 6 freezer pop molds or 6 paper cups (3 ounces each) and wooden pop sticks
